Founded in early 2020 by Chef Matt Le-Khac, Bolero is a new Williamsburg restaurant reimagining the future of postcolonial Vietnamese cuisine. An alum of Finch, Blue Hill Stone Barns, and An Choi, where he served as head chef, Le-Khac applies modern culinary techniques to traditional flavors, emphasizing seasonal and rare ingredients sourced from his own 4-acre family farm. Bolero’s mission to dive deep into all things Vietnamese, from food and drink to architecture, history, and music. The restaurant takes its name from the eponymous style of dance popularized during 1950s-era Saigon.
